The Nishida funayuki 180mm is a bit of a hybrid design. Looking like a cross between a regular funayuki and a santoku, this knife is a great all-around kitchen cutter and chopper.

The blade is made from a san mai construction of white (Shirogami) #1 steel with a soft iron cladding. The cladding is finished in the blacksmith style or kurouchi finish. It then transforms into a bead blasted kasumi finish which ends at the exposed edge of core steel.

The shape of the blade is rather like a long santoku with a thin neck for good finger clearance. It features a good sized flat spot at the back with a nice sweep to the sheep foot point. Nishida-san puts a really nice grind on all his blades and this funayuki is no exception. Also like his other knives, Mr. Nishida likes to make them a bit thicker in the spine with a taper that only starts close to the tip. These blades are completely hand made so the specifications will be slightly different for each one.

The blade material is reactive so remember to keep it clean and dry between uses. It is finished with a gloss octagonal wa style handle with no ferrule.
