Tetsuhiro Knives Tetsuhiro knife company is located in Sanjo City, Niigata Prefecture which is well known for their many knife companies. These excellent knives are made with blue paper 2 steel (aogami #2) with HRC of about 62. The knives are clad with stainless steel on the outer layers giving you the benefit of an extremely good cutting edge with the convenience of stainless steel.
The white #1 steel knives with the hammered finish are heat treated to HRC61.
