Misono UX10 Series The Misono UX 10 Series is well known by professionals and has an excellent reputation for knives that have high quality steel and good fit and finish. Misono UX 10 knives use a steel formulation called Swedish Steel that are totally rust resistant, yet can take and hold an extremely sharp edge. Misono knives are thin and light and have excellent balance. They are easy to re-sharpen and the steel hardness is an ideal (HRC59-60). We recommend these knives for professionals and home cooks that are looking for high performance without the care needed for true carbon knives. Please note that the edge is beveled on the right side and are best suited for right handed users. We are working on getting left handed versions of these knives in the near future. You can resharpen these knives using any bevel you wish so if you are left handed just resharpen them to your liking.
