Misono is one of the most well-established knife producers of Western-style Japanese knives. Its home is in Seki, a city with a 750-year history in knife crafting. Misono knives unite traditional craftsmanship with modern technology and are designed and built for high-level professional use. Chefs around the world appreciate Misono knives for their quality, design, durability and sharpness. The 240mm Sujihiki featured here is a top of the line tool for slicing most cooked or raw proteins. It is also a great sushi knife for those preferring a double sided blade. Its thin and finely ground blade passes through food with little stiction. The edge has an asymmetrical bevel set at about 10 degrees on the right and 20 degrees on the left. The Swedish High carbon steel is very reactive and demands care in cleaning and drying. But because of the alloyís fine grain structure it takes and holds a super sharp edge. The strengthened Pakka wood handle protects against water damage and each knife is hand sharpened by Misono artisans to ensure maximum sharpness out of the box. A beautifully engraved dragon adds a finishing touch to this fine slicing implement.

    Please note: These are carbon steel blades and they will oxidize over time. This is normal for this type of steel. They will also rust if left wet so dry them after each use. Some users apply a bit of oil to the knife after drying to keep the knife from rusting.

    Very good knife came very sharp out of the box but felt it could've been a little sharper. After some time on the stones it's now wicked sharp, frankly kinda scared to use it.
