Misono is one of the most well-established knife producers of Western-style Japanese knives. Its home is in Seki, a city with a 750-year history in knife crafting. The 240mm Sujihiki featured here is a top of the line tool for slicing most cooked or raw proteins. It is also a great sushi knife for those preferring a double sided blade. Its thin and finely ground blade passes through food with little stiction. The edge has an asymmetrical bevel set at about 10 degrees on the right and 20 degrees on the left. The Swedish High carbon steel is very reactive and demands care in cleaning and drying. But because of the alloyís fine grain structure it takes and holds a super sharp edge. The strengthened Pakka wood handle protects against water damage and each knife is hand sharpened by Misono artisans to ensure maximum sharpness out of the box. A beautifully engraved dragon adds a finishing touch to this fine slicing implement.
