Misono Swedish Carbon knives are made from Sandvik Swedish carbon steel, considered to be one of the purest forms of carbon steel. All carbon steel naturally bends after being forged then hardens by spontaneous structural changes over several years. To resolve this age hardening phenomenon, Misono has their skilled forgers in Saki city hammer the carbon steel sheets to strengthened the steel exactly like traditional Japanese blades.

The Misono Swedish 80mm parer is a knife best suited to small and intricate cutting jobs. Looking to create those perfectly formed garnishes? Well this is your knife! Its fairly flat profile and pointed tip enable the user to get into the tightest places with precision and ease.
The beautifully finished blade is attached to a strengthened wood handle using a full metal bolster and full tang. The knife has fairly thin blade measuring just 1.5mm and tips the scales at a spry 61g. It come right out of the box with a very sharp edge which is easy to maintain and resharpen.
Swedish Carbon steel is not rust resistant and requires special care. You must dry this knife completely after use and avoid cutting high acid foods to prevent oxidation.

    Great fit and finish. Develops a beautiful patina with use. Came with a great edge out of the box. Lovely steel that takes an edge easily and holds it.
    If you want a carbon steel parer you can spend more but you won't get a better knife.
