This is my first japanese chef knife. It is extremely sharp and easy to use. It’s the first knife that I’ve used that felt comfortable in my hand. It felt balanced and not too heavy (some western knives) or too light (cheap stuff).
This is a beautiful steel all around. Balanced,crazy sharp out of box,easy to sharpen. The .25" at the tip of the blade gives it a little more but not to much.....just perfect. Loved it so much I bought the santoku!!!

Insanely light and wickedly sharp,slightly scared to really use it in the commercial kitchen as it seems so dainty. This is a knife that if picked up by anyone but me i might amputate their fingers.

It is a beautiful knife - what else can we say? It was a birthday present for my youngest son,who just set up camp in New York City. He is thrilled with it,and he himself will complete a set with three or four more of the same type over the coming couple of years.
