an extremely comfortable handle, and the knife has a perfect balance from heel to tip. The steel is beautifully thin and hard, and makes slicing really anything a breeze. For those that need high performance and are willing to pay the price, this is your knife.

This is my first japanese chef knife. It is extremely sharp and easy to use. It’s the first knife that I’ve used that felt comfortable in my hand. It felt balanced and not too heavy (some western knives) or too light (cheap stuff).
This is a beautiful steel all around. Balanced, crazy sharp out of box, easy to sharpen. The .25" at the tip of the blade gives it a little more but not to much.....just perfect. Loved it so much I bought the santoku!!!
Swedish steel in the hands of Misono’s master craftsmen produces knives like the UX 10 210 Gyuto. Unlike many fine Japanese knives,it arrives razor sharp, and keeps a really good edge. A light, thin, laser of a knife.
CKTG had the UX 10 in my mail box within four days. I couldn’t ask for quicker service.
Insanely light and wickedly sharp, slightly scared to really use it in the commercial kitchen as it seems so dainty. This is a knife that if picked up by anyone but me i might amputate their fingers.
love the knife and service provided by chefknivestogo.com.package was at my door in 4 days. perfect for use in a professional kitchen. love it

It is a beautiful knife - what else can we say? It was a birthday present for my youngest son,who just set up camp in New York City. He is thrilled with it,and he himself will complete a set with three or four more of the same type over the coming couple of years.

My son loves it!,he is studying to be a chef. Thank you so much for making his Christmas.
good knife, super thin and light. feels kind of flimsy/too light for certain tasks. good edge retention, but there are better knives for the money out there
