Richmond Laser AEB-L 240mm Gyuto

Gyutos are the Japanese equivalent of the ubiquitous Chef knife. They are normally built lighter and thinner than their western counterparts and feature profiles that are usually slightly flatter. Most gyutos fall in the 210mm to 270mm length range, the middle of which this particular knife resides. Other dimensions of note are the blade height of 48mm which is about average for this blade length. What is not average however is the ultra thin profile which gives rise to the name, laser. Starting at the heel the spine measures 2.3mm. This tapers down to a thin 2mm at the mid point and ends in an ultra thin tip measuring just .7mm.

We have these blades constructed from the finest grain stainless steel available, AEB-L. They are hardened to 61 Rockwell, which is the sweet spot for this alloy. The fine grain structure gives the steel a wonderful ability to take and hold a very sharp edge. And even though it is a thin blade it is no wallflower in regard to its overall toughness and ability to tackle most ingredients. Of course as it is a stainless steel it means that general maintenance is kept to a minimum.

The nicely finished blade is further enhanced by an upgraded octagonal handle made from magnolia wood with a buffalo horn ferrule. The result is one of the best performing stainless knives that we stock at a price that belies its abilities and construction.

  • Actual Edge Length: 230mm
  • Blade Height: 48.4mm
  • Thickness at spine/heel 2.3mm
  • Weight: 5.4oz
  • Steel: AEB-L
  • Hardness: HRC 61

  • Spine/Choil: Rounded Slightly

This knife is great. It is very lightweight and super sharp right out of the box. Retains its edge and is easy to sharpen. Great buy!!

I'm in the market for a new knife, & these have caught my eye. I work in a professional kitchen & I need something that will stand up to day to day slicing, mincing, chopping, etc. I'm considering either the Addict 2, the Laser, or the Ultimatum. As an aspiring chef, any & all help, hints & clues as to which knife is best would be appreciated. So far, it looks like the Laser is going to win hands-down.

    Hi Mark,
I got my Laser Friday and have chopped my way through every onion, pepper, potato and tomato in the house. It is an absolute beauty and I love the way it flies through food on the board.
It is a beaut! You should be happy with it as the creator.

Really loving the Richmond Laser I received last week. Right out of the box sharp, gorgeous F&F, great looking wood. The shape is almost identical to my Sakai Yusuke 240 wa, but is a bit thinner with a sharper taper. My 270 Tad is usually my go-to, but your Lazer is quickly becoming a favorite, despite the size difference. Handling qualities seem to be making up for size......... Cudos, sir, and thanks for a great product.
