Kujira knives are notable for their incredibly unique and characterful aesthetic. This 200mm santoku is handmade by Ken Kageura, a 25th generation blacksmith with over 50 years of experience. The knives are san mai construction with the cladding layer forged from scrap steel. The resulting cladding has a faint Damascus pattern and a subtle copper hue. The cladding wraps around a core of Aogami #2 carbon steel, a high performance steel lauded for taking outstanding edges and holding them for extended periods of time. The core steel is heat treated to 62-64 HRC. The soft Damascus pattern will deepen in color and increase in contrast as the reactive cladding and core steel begin to patina.
The handle on the Kujira knives is rosewood with a black pakka wood ferrule. It will hold up well thanks to a stainless steel tang. In addition to the very characterful cladding, the Kujira santoku is also notable for its dimensions. Santokus are often 165mm-190mm in length and 46mm-50mm in height. While the Kujira santoku is handmade and individual knives will vary dimensionally, the knife is listed at 200+mm in length and almost 60mm in height.
