Shiro Kunimitsu are excellent knives made by swordsmiths from Fukuoka, Japan. The knives you see here are made with a Yasuki steel core, which is clad in stainless steel. This method of construction is called san mai. It is done to give the blade stainless protection right down to the edge where the Yasuki steel is revealed for the hard cutting core. This results in a knife that is easier to maintain than a normal carbon steel blade. It is important, however, to wash the knife thoroughly after each use and to wipe it completely dry with a clean cloth.

Like the versatile chefís knife, a nakiri knife is a champion vegetable chopper, slicer, and mincer. More slender than a cleaver, a nakiriís rectangular blade with super-sharp straight edge easily preps everything from summer tomatoes to winter squashes. The almost flat blade comes in contact with the cutting board along the entire edge of the knife. So, say goodbye to those annoying accordion cuts. This is a fairly thin blade so it should not be used as a cleaver.
