In the rarified air of high end Japanese kitchen cutlery, it is no small feat to stand out. This Kujira 240mm gyuto, handcrafted by Ken Kageura, a 25th generation knife maker with over 50 years experience, is definitely a stand out. The core steel is Aogami #2 hardened to 62-64 HRC. Aogami #2 is capable of taking the keenest of edges and holding them exceedingly well. The highlight of the Kujira series is its unique cladding. The cladding is forged from scrap steel, yielding a subtle Damascus pattern and a copper hue to the knife. The cladding and core are both reactive so the Damascus pattern will become more characterful as individual layers take on a patina at different rates. The handle is ambidextrous with an oval shape and is made of rosewood with a black pakka wood ferrule. The tang of the knife is stainless steel to ensure the longevity of the handle.
