Chef Knives To Go is fortunate to have the opportunity to offer a wide selection of high quality handcrafted Japanese knives. Even among such varied esteemed company the Kujira series is distinguished for its unique and stunning aesthetic. This 210mm gyuto is made by Ken Kageura, a 25th generation blacksmith with over 50 years of experience. Mr. Kageura forges the iconic cladding out of scrap steel, producing a subtle Damascus pattern and a copper hue. The all-reactive cladding wraps around an Aogami #2 carbon steel core hardened to 62-64 HRC. The contrast between the laminations in the reactive cladding will increase as the knife takes on a patina. The handle is oval in shape, making it comfortable for left- and right-handed users, and is made of rosewood with a black pakka wood ferrule. The tang is stainless steel increasing the longevity of the handle.
