Gyutos are the Japanese equivalents of the Western chef knives. They are the go-to knife of most chefs and home cooks. This Kunimitsu gyuto is fairly short for the breed and is well suited to those looking for a light, small blade capable of tackling most tasks around the kitchen. The blade height is 43.5mm, so itís perfect for those with smaller hands.

Kunimitsu constructs his knives from a san mai combination of Yasuki white #1 steel with a stainless outer layer. The core steel is exposed along the edge so it must be carefully dried after use otherwise corrosion will become an issue.

The profile of the knife is about average for a gyuto of this size. A slight but not pronounced belly makes it a good choice for push/pull cutters as well as rocking style users.
