This Konosuke White #2 Wa-Gyuto measures 240mm on the blade and comes with a octagonal handle and buffalo horn ferrule. The spine is rounded and this knife is very thin and light. Weight is just 145 grams. Spine thickness is 1.95mm. The blade is made from Hitachi White #2 Steel which is reactive and takes a great edge with a 61 hrc. I love quality white steel.This is a fine carbon knife,nice handle,buff. horn,thin light blade.When you cut with this,you know you have a great tool in your hand.
Well,this would make the third purchase of a Konosuke. Now,I’ve never purchased three manufactures knives. Never. But,when they get it right,it’s hard to go to something else. Thin and light and gets very sharp. It is reactive since it’s white #2,but a little TLC and it’ll pay you back tenfold. And the usual great service from Mark.

This is a really fantastic gyuto! A real laser. The edge it takes is spectacular and edge retention is great. Geometry-wise it’s very close to ideal. It’s also way less reactive than I expected.
This is easily the lightest knife I own; it weighs in at just under 5oz! That’s five ounces for a 240mm gyuto! Amazing! Even lighter than my Nubatama.
This is a Five Star knife in every way. Highly recommended.
