This Fujiyama honyaki is by far the most nuanced and impressive example of knife making skill I own. I've never seen anything that gets thinner behind the edge than this knife and the grind is a thing of absolute beauty. The hamon from the differential heat treatment is quite pronounced which provides for a gorgeous aesthetic.
The feedback from the blade is outstanding and it moves through produce like lightning. It is up there with the best of my knives performance-wise, but blows them all away in terms of refinement and the level of skill it took to make this blade.
