Konosuke Wa-gyuto Ginsan 240mm. There are several words for this steel including G-3, Ginsanko, Silver 3 etc. It's excellent stainless steel that comes nice and hard at HRC 62 and holds it's edge extremely well. The Silver 3 line of knives is made by the Konosuke blacksmith and is one of our favorite's on the site. This one comes with a satin finish and western hybrid handle made of ebony.
