The all new Konosuke HH Stainless. HH stands for High Hardness and we've asked Konsosuke to harden these knives to HRC61 and the result is a marked improvement in edge holding ability along with excellent stainless protection. The blade measures 270mm and comes with a nice ho wood octagonal handle and buffalo horn ferrule. The spine is rounded and this knife is very thin and light. The fit and finish on these knives is excellent. The 270mm Sujihiki from Konosuke is made from Swedish stainless steel and comes attached to an octagonal Ho wood handle with a black buffalo horn ferrule. This is a great length for a slicer. Perfect for rib roasts or slicing your favorite fish for sushi. This steel is known for being stain resistant and for the extremely sharp edge it is capable of achieving.
