This Konosuke Tsuchime (roughly translates to hammered) line of knives are san mai constructed with SKD Tool steel on the core and wrapped with softer stainless to provide protection from rust. This knife is a joy to use,f&f is amazing. Unfortunately the edge only last through a couple of shifts for me,probably reacting to a considerable amount of limes cut on a daily basis,(roughly ten pounds),but if not for that it will hold the edge through 4 7hour shifts at max but with a decently sharp edge. really amazing to use with the price of edge retention compared to stainless. For a home user the edge can last for an impressive amount of time but unfortunately this is my home and work knife so it tends to need a shapening every 3 days
