Posted By: David S.When i was initially looking to purchase my own kitchen equipment as a young home cook, the allure of Japanese knives really pulled at me. The hand-made works of art.. Harkening back to the days of traditional sword making.. It was an overpowering urge. But when I looked at the prices, I felt it was a foolish endeavor, so I tried to sate myself with a simple set of Wusthof's (which served, and continue to serve, me well)
But something about them, as great as they were, really didn't satisfy that "itch". For the hand crafted expertise.. For these ridiculously thin, hard knives, that with proper technique seemed to turn anything that touched them into ribbons. So after fighting the temptation for two years, I finally gave in. And THIS is the knife that I finally decided on, after many, Many hours of reading on the forums / browsing YouTube videos for info.
Everything about it feels just amazing. With my previous longest knife being a 7" Santoku, this knife GREATLY overshadows it in size, and yet the weight and balance make it feel unbelievably nimble. The ridiculous level of craftsmanship that went into all aspects of this blade- profile, fit, finish, the grind.. It cuts like nothing I've ever touched, and is instantly addicting. I find myself wanting an excuse to cook more / prep more things, just to have a reason to use it.
The only thing I can think to warn you about is that buying this knife will Not help you overcome the urge to buy quality Japanese knives- it'll only stoke that fire and make you want to buy more. But if you DO choose this knife, you won't be disappointed.
