Many people regard the Konosuke Fujiyama series as the pinnacle of kitchen knives. Some knife collections are entirely based around these finely crafted blades. The Fujiyama line is split into various sub groups depending on the steel used and method of construction employed.

The White #2 Gyuto 270mm featured here is a perfect example of the art and science of the Fujiyama brand. The steel used is the ubiquitous Hitachi Shirogami 2 carbon steel. It is hardened to a Rockwell rating of about 61. This imparts great edge strength and resilience. It is also a fairly easy steel to sharpen. There is a softer iron cladding applied to aid in lightening the blade and protecting the core steel. It is highly reactive and requires attention to cleaning and drying at all times.

Fit and finish are up to Konosuke’s usual and well-renowned high standards—simply stunning. The spine and choil are perfectly polished and rounded. The blade face is beautifully finished and features a very attractive shinogi line. Hand-chiseled kanji and a lovely traditional ho wood and buffalo horn handle complete the masterpiece.

Fujiyamas are also about performance and here the knife shines brightly. Balance and speed are words that come to mind when using the Fujiyama White #2 Gyuto. Whether push cutting, rocking, or using the finely crafted tip for delicate work, the knife just dispatches ingredients like they are not there. While it is not a laser, the blade is really thin behind the edge and this highly accurate grind coupled with the well-proportioned profile result in the knife’s outstanding cutting and handling attributes.

    When i was initially looking to purchase my own kitchen equipment as a young home cook, the allure of Japanese knives really pulled at me. The hand-made works of art.. Harkening back to the days of traditional sword making.. It was an overpowering urge. But when I looked at the prices, I felt it was a foolish endeavor, so I tried to sate myself with a simple set of Wusthof's (which served, and continue to serve, me well)

    But something about them, as great as they were, really didn't satisfy that "itch". For the hand crafted expertise.. For these ridiculously thin, hard knives, that with proper technique seemed to turn anything that touched them into ribbons. So after fighting the temptation for two years, I finally gave in. And THIS is the knife that I finally decided on, after many, Many hours of reading on the forums / browsing YouTube videos for info.

    Everything about it feels just amazing. With my previous longest knife being a 7" Santoku, this knife GREATLY overshadows it in size, and yet the weight and balance make it feel unbelievably nimble. The ridiculous level of craftsmanship that went into all aspects of this blade- profile, fit, finish, the grind.. It cuts like nothing I've ever touched, and is instantly addicting. I find myself wanting an excuse to cook more / prep more things, just to have a reason to use it.

    The only thing I can think to warn you about is that buying this knife will Not help you overcome the urge to buy quality Japanese knives- it'll only stoke that fire and make you want to buy more. But if you DO choose this knife, you won't be disappointed.

    This is one honey of a blade. Take a scary Sharp edge and holds it better than the description of the steel led me to believe. Fit and finish are outstanding. The weight and balance are perfection. All in all, sharp, smooth and sexy.

    Awesome, near perfect. The fit and finish are incredible, not only is the spine mirror polished but it is beveled on each side. The choil is also beveled and mirror finished. This knife is really sharpe; white steel takes an incredibly sharp edge. The weight is near perfect, more substantial than lazer thin blades. I love this knife.

    What a beautiful knife! Its everything the standard white steel knives are but more, better fit and finish, better edge, better edge retention definitly worth the extra money
