These are the all new Swedish Stainless HH series. HH stands for high hardness. We had Konosuke change the heat treatment of these knife and lifted the HRC to 61. Now you can get great performance and easy sharpening with excellent stainless properties all in one. This 150mm petty from Konosuke is made from Swedish stainless steel and comes attached to an octagonal Ho wood handle with a black buffalo horn ferrule. It is a great length of knife for using as a small slicer, larger paring knife or in tight situations where a longer knife would be unwieldy.
