Konosuke HH Funayuki Gyuto 240mm. Konosuke HH Stainless Funayuki Gyuto 240mm. The all new Konosuke HH Stainless. HH stands for High Hardness and we've asked Konsosuke to harden these knives to HRC61 and the result is a marked improvement in edge holding ability along with excellent stainless protection. The blade measures 240mm and uses comes with a nice ho wood octagonal handle and buffalo horn ferrule. The spine is rounded and this knife is very thin and light. The funayuki gyuto is an exclusive knife profile developed for CKTG and features a flatter blade edge with less belly and is ideal for push cutting and makes sharpening the knife a little easier.

I can’t say enough how happy I am with my 1st laser gyuto/funayuki.
It us a great knife with no wedging,great kirenaga,beautiful fit and finish. All the other itamae I work with were drooling over it.
Sharpening is a breeze. Use 2k and then finish with the 6k. Great for all types of cutting and slicingI for prep. Would never cut kiritske. But great for makimono. I do not have any HD knives but believe that for great ease of care/ durability the HH line is great. I think when some people say the sharpness and kirenaga is superior to the HD line I think they are splitting hairs and that for most professionals it is probably one of the best bang for the buck knives out there.
I would say my only complaint is that it is called a funayuki. I wish the sori (belly) was less curved and it had more of a true funayuki profile.
