The HD line from Konosuke has the same dimensions as the White #2 line, but is made from a proprietary semi-stainless steel to provide that extra protection from discoloration. Care does need to be taken to prevent rusting, but these knives take on a great patina which will also help to curb discoloration. This 210mm Petty is excellent for meat trimming or as a smaller slicer. Heat-treated to an HRC of 61, these blades are attached to a stabilized octagonal Ho wood handle with a Water Buffalo Horn ferrule. As with all of our Konosuke knives, these come with the option of a matching saya.

This is THE knife for anyone who works the line. It is small (for tight working spaces),nimble,doesn’t rust. Edge retention is super. Great for protein slicing. Also works well for cleaning tenderloins.
Fit and finish is remarkable. Handle is top notch and nicely sized; same size as my 240mm HD gyuto. Knife is perfect in every way!

Great knife. Great size. F&F is incredible,as always with Konosuke knives. This thing is so light,nimble,and out of the way on the line. And it is sharp. Can’t wait to use this at work.
