The HD line from Konosuke has the same dimensions as the White #2 line, but is made from a proprietary semi-stainless steel to provide that extra protection from discoloration. Care does need to be taken to prevent rusting, but these knives take on a great patina which will also help to curb discoloration. This 180mm Nakiri is excellent for use in a professional kitchen. HRC of 61, these blades are attached to a stabilized octagonal Ho wood handle with a Water Buffalo Horn ferrule.
Holy crap you guys. THIS. KNIFE. I’m a line cook in a super busy restaurant with heavy prep,and this knife has been a game changer. RAZOR sharp out of the box,and RAZOR sharp two weeks later of putting it to work five days a week. It is barely reactive,and by far the best knife I’ve owned to date. Perfect weight,perfect handle,perfect blade length... I can’t say anything bad about it. Perfect. Highly recommend it.
