- verified customerDespite reading countless reviews on blogs and forums praising Konosuke in general (and the HD line in particular), this knife has so far exceeded all expectations. Looks and feels like a work of art. The balance is surprisingly even (rather than blade heavy), probably because of the heavier ebony, but the knife still feels like a natural extension of my wrist rather than a kitchen instrument. OOTB edge is great on general foods, but not polished enough for scary sharp cutting of tougher-skinned foods. It also feels like it has a very slight, uneven burr or wire along the front edge to the touch. I expect I will love this knife even more once I give it a nice, high polish/strop after its first month of use‚ÄĒthe factory edge is certainly good enough to get used to the shape and geometry of the blade before giving it a personalized edge. Service, as usual, was excellent from answering questions through product arrival. Thank you!
