Konosuke HD Gyuto 240mm has a new and improved shape. This one has a larger flat spot on the edge which is ideal for general kitchen use and especially push cutting. This is one of our favorite blade shapes so we asked Konosuke to make them exclusively for CKTG. The 240mm Funayuki/gyuto has a 2 sided edge and comes with an ebony octagonal handle and blond buffalo ferrule. It's also easier to sharpen.
Actually,the knife that arrived was not what I ordered,but this Konosuke 240mm new shape gyuto looked so nice I almost kept it. Blade is thin and perfectly straight,knife is feather light,handle is good but could be of slightly greater diameter for my preferences but I am sure the user would adapt to it.

Despite reading countless reviews on blogs and forums praising Konosuke in general (and the HD line in particular),this knife has so far exceeded all expectations. Looks and feels like a work of art. The balance is surprisingly even (rather than blade heavy),probably because of the heavier ebony,but the knife still feels like a natural extension of my wrist rather than a kitchen instrument. OOTB edge is great on general foods,but not polished enough for "scary" sharp cutting of tougher-skinned foods. It also feels like it has a very slight,uneven burr or wire along the front edge to the touch. I expect I will love this knife even more once I give it a nice,high polish/strop after its first month of use—the factory edge is certainly good enough to get used to the shape and geometry of the blade before giving it a personalized edge. Service,as usual,was excellent from answering questions through product arrival. Thank you!
