The Konosuke 240mm HD Custom Gyoto is an absolutely fantastic knife made even better with the addition of a semi custom handle made by Pierre Rodrigue. The handle is made from flamed redwood burl and finished to a superbly high standard.

The grind on this knife is slightly convex and super thin which adds up to a blade that is both light and quick while accepting a wickedly sharp edge. The flat profile is suited to users who prefer a push or pull cutting action over a rocking style. Konosukeís proprietary HD semi stainless steel affords less maintenance than a carbon blade, however it does require the user to clean and dry it after use. A lovely patina will eventually develop which adds a protective coating to the blade. Fit and finish are up to the renowned Konosuke standards as is the out of the box razor sharp edge. A great knife for the kitchen connoisseur and collector of fine blades.

    Despite reading countless reviews on blogs and forums praising Konosuke in general (and the HD line in particular), this knife has so far exceeded all expectations. Looks and feels like a work of art. The balance is surprisingly even (rather than blade heavy), probably because of the heavier ebony, but the knife still feels like a natural extension of my wrist rather than a kitchen instrument. OOTB edge is great on general foods, but not polished enough for scary sharp cutting of tougher-skinned foods. It also feels like it has a very slight, uneven burr or wire along the front edge to the touch. I expect I will love this knife even more once I give it a nice, high polish/strop after its first month of use‚ÄĒthe factory edge is certainly good enough to get used to the shape and geometry of the blade before giving it a personalized edge. Service, as usual, was excellent from answering questions through product arrival. Thank you!

    Actually, the knife that arrived was not what I ordered, but this Konosuke 240mm new shape gyuto looked so nice I almost kept it. Blade is thin and perfectly straight, knife is feather light, handle is good but could be of slightly greater diameter for my preferences but I am sure the user would adapt to it.
