The sujihiki is fundamentally a slicing knife, the Western equivalent of a yanagiba (single bevel sushi knife). This knife is made with a two-sided bevel. It is perfectly suited for jobs that require single cutting strokes like slicing fish and other general duties such as slicing rib roasts. It is made with Konosukeís proprietary semi stainless steel and combined with a traditional Ho wood octagonal handle and Water Buffalo ferrule. Fit and finish are of the highest standards. The steel is heat treated to an HRC of 61. And while it is a semi stainless it does require a bit of extra care over a full stainless steel. The patina it will develop helps to curb discoloration and rust.
