Konosuke HD 240mm Gyuto. The HD line from Konosuke has the same dimensions as the White #2 line, but is made from a proprietary semi-stainless steel to provide that extra protection from discoloration. Care does need to be taken to prevent rusting, but these knives take on a great patina which will also help to curb discoloration. It is the all-around multi-tasking blade and great for so many jobs. Heat-treated to an HRC of 61, these blades are attached to a western style handle made of Dupont Corian. As with all of our Konosuke knives, these come with the option of a matching saya.
Great product and service it came within a week and thats pretty ok for international. I expected longer. I decided to get this item because I own a few carbon kono’s and decided to get something a bit more lower maintenance in a commercial kitchen.
Also i was attracted to the handle. The blade came Sharp Out of the box. It felt a bit too big but got used to it,feels like a 210 and pretty nimble knife. The knife feels pretty solid and performance is great!. Its been through about 5 hours of prep from lettuce,capsicums,onions,tomatoes,fruit,pumpkin,meat and Ive ONLY stropped this a once to get it back to its original edge. Its dam fun with this knife and i don’t need to baby it as much as a white #1 steel. I’ve been rough as guts with this knife putting it through its paces and im pretty impressed with it. The handle got wet a few times while prepping and didnt find it slippery when wet at all. It felt really comfortable. Seeing this is my first purchase from cktg i will be back for more items.
