The Konosuke HD2 150mmm Honesuki boning knife is a firm favorite around here. It is lighter and thinner than a garasuki and is used in place of a Western boning knife. Because of its thickness and shape it can be used for many heavy tasks requiring a stout short blade. This knife is ideal for removing meat from bone but should never be used to cut through bone.

This light yet strong knife is made from Konosukeís proprietary HD semi stainless tool steel. A fine grain steel offering an ease of maintenance more akin to a full stainless than a normal carbon. The HD steel also bridges the gap between stainless and White carbons with its ability to take on a screaming sharp edge with great edge retention characteristics. A light colored stabilized Ho Wood handle and Black Water Buffalo ferrule complete the specifications of impeccably finished and very useful boning knife.
