These are the all new Swedish Stainless HH series. HH stands for high hardness. We had Konosuke change the heat treatment of these knife and lifted the HRC to 61. Now you can get great performance and easy sharpening with excellent stainless properties all in one. This Konosuke Wa-Gyuto measures 210mm on the blade and uses stainless steel, ho wood handle and buffalo horn ferrule. The spine is rounded and this knife is very thin and light. The blade is made from Swedish steel, hardened to 58+hrc. The fit and finish on these knives is excellent. Handles are octagonal with buffalo horn ferrule.
F&F on the knife are superb. Geometry is also really nice. Edge retention has been good so far,and edge sharpness was very good. As an aside this knife is very small,even for a 210,and has a fairly thick spine for the size. That being said the spine tapers quickly and the knife gets much thinner towards the tip.
