Konosuke Ginsan 240mm Gyuto With Yew octagonal handle. These are fantastic knives and are one of the current favorites on our site. These are two sided knives with 50/50 edges. They have a beautiful secondary bevel on each side that really sets the knife apart from others aesthetically. This one comes with a beautiful ho wood octagonal handle with buffalo horn ferrule. Ginsan steel is excellent quality stainless steel so this knife will look as good as it performs. Konosuke is making some of the best knives we carry and this one is a beaut.

    This is a beautiful knife with impecable fit & finish. Unfortunately, it ended up being far too short at the heel for my preferences.

    Pros:
    G3 Steel is done beautifully! This knife made G3 one of my favorite steels and is stainless.
    Beautiful in its simplicity.
    The grinds. Laser thin with some backbone to it.
    Flat profile (If this fits your style, it did mine).

    Cons:
    Quite undersized, feels more like an oversized 210 (Only a con if you love a true 240).
    Possibly the flat profile if that doesn't fit your style.

    One of the most beautiful knives I've bought! I want another (but probably in a 270).

    I haven't used this knife very much yet, but first, second, and additional impressions are strong. This is an excellent knife. Mine is exceptionally thin (spine and grind) and exceptionally well-ground. May be a bit delicate for some usersóthis feels like a laser, although I have yet to sense just how tough/durable/delicate it actually is with a variety of ingredients and techniques. Mine also has a flatter profile than my other Konos, and features a less triangular tip. So far, impressions of the steel (sharpness and sharpening feel) are very good. While I don't have experience with many other brands, the blade feels like a great deal for the price. Very special despite the simple presentation and basic handle. Highly recommended, especially for HD and HH lovers.
