- verified customerawesome knife, i love this steel as a decent work horse steel, and it has all the advantages of a high carbon steel. ginsan has smaller carbines, it will get razor sharp... this knife is a laser... my only fault is that the handle is light... this is a light knife all together.. also my handle wasn't really crafted well all together either, where the horn and wood meet it is not seamless as i would expect, i own a konosuke fujiyama blue #2 210 petty, a takeda 245 ish gyuto and this here, as well as a shun vg-10 chefs knife... really dislike that steel, seems a bit more fragile than this steel yet this steel is also very delicate... there is a big flat spot, like you will see in the video... you can still rock decently, most product will stick when you cut it, for me thats not a major problem, the good out weights the bad on that , use it every night as my line knife, great size, all purpose knife... i would buy another one if it went out or was lost... i wish they made a 120 petty and the handle was made as nicely as the fujiyama series. service with this company is amazing, fast shipping as always. no hassle ever. hope this helps.
