These knives are made from Silver 3 Steel (AKA Ginsan or Ginsanko) and we chose some really spectacular knives to offer from Konosuke to show off this excellent stainless steel. The blacksmith they chose is one of the top guys working in Sakai currently. These are two sided knives with 50/50 edges. They have a beautiful secondary bevel on each side that really sets the knife apart from others aesthetically. This one comes with a beautiful western hybrid handle. Ginsan steel is excellent quality stainless steel so this knife will look as good as it performs. Konosuke is making some of the best knives we carry and this one is a beaut.
I was hesitant about buying 1 of these because of the price which is pretty high but when 1 came up in the close out section,I jumped at the chance.
The OTB edge is by far and away the best ive ever had. Since receiving the knife,it has received pretty much daily use. It is as sharp as it was when I got it!!! I have not sharpened it,simply the occasional strop!
The profile is outstanding and it lasers through everything. You can actually feel the smoothness of of the cut when you eat carrots for example! Pretty insane!
I had read mixed comments on the ginsan steel but I couldn’t be happier.
The fit and finish is impeccable,the knife is very beautiful,it’s stainless so very little care needed AND the edge just seems to go on forever!
I own various knives of different steels,White 2,Aogami Super,VG10,etc. This has quickly become one of my favourite knives,it is perfect for its purpose. I cannot imagine a "better" nakiri at any price level!
