Konosuke Fujiyama White #1 Yanagi/Kiritsuke 270mm. This knife is a beautiful example of Sakai craftsmanship. The knife is hand forged by a master blacksmith and then passed on to an engraver, grinder and finally a handle maker. Each craftsman is an expert artisan in their field and the result is a gorgeous knife that performs and feels great. White #1 steel is an excellent steel that sharpens well and holds a very acute edge. The handle is made from ebony and has a blond buffalo ferrule.
I have had this knife for almost a year now and I have loved every second of using it. I personally love White #1 carbon,nearly every knife I own is made of it. It takes an edge better than anything else. It does have the drawback of needing to be sharpened a lot more often though. This knife is one of the most comfortable yanagis that I have used. The weight is a bit heavier than average,but this adds to the control and the comfort,in my opinion. Buying this knife has convinced me to order the gyuto version of it to replace my Fujiwara Terayasu Nashiji gyuto.
