Konosuke Fujiyama White #1 Gyuto 240mm Ebony. Kosuke, the owner of Konosuke writes: "The Fujiyama series is made by the blacksmith of Japanese style knives. These are hand forged and hand hammered knives with superior fit and finish and nice hand engraving. This particular knife is made with White #1 steel which has excellent properties for kitchen knives. The knife takes a great edge and holds it well. It comes with an ebony handle and buffalo horn ferrule.

    Are you kidding me? This is a beautiful knife, with incredible fit and finish, that works well at everything. The White #1 steel takes an incredible edge, is a joy to sharpen with Jnats, and is also so tough for such a hard steel that I “accidentally” cut through an avocado seed with both a perfectly smooth cut and blade edge. The patina it is developing is a work of art in itself, too. Expensive? That depends on your definition. It is worth every penny.

    I really enjoy this knife. F&F were great really nice looking knife. Great feel to it, the handle is a bit longer then other konosuke's ive had/used but it really adds a nice balance, out of box edge was good, however i took it through 1k,3,5,10,16k and finished with balsa and boron, and yowzers. Tho pricey I would recomend this knife to anyone that is looking for a great knife

    So, this being my fifth Konosuke, I had a good feeling about what I was getting myself in for. It's not a laser first off, think it clocks in at like 7 or so ounces. Out of the box wasn't the best oddly enough, but for a really close konosuke box edge I took it to my 1k natural and finished with a leather strop. Really, really close.
    Performance was really good, but this knife is just wanting to be taken to the high grit stones. Feels a lot smoother than #2 while using the polishing stones and it does get sharper and keeps it a little better. Over all a beautiful work horse. And the usual great service from Mark.
