It is hard to please everyone, it is particularly hard to please all of the most discerning users of high end cutlery, but the Konosuke Fujiyama line of knives comes very close. The Konosuke Fujiyama line of knives are handmade in Sakai City, Japan by some of the best craftsman in their field. This 210mm gyuto is made with an Aogami #2 carbon steel core hardened to 61-62 HRC wrapped in a soft carbon steel cladding layer. As both steels are reactive, the knife will patina with normal use. The knife handle is a high quality, octagonal shaped handle with a top quality installation. While handcraftsmanship imbues these knives with tremendous character, it also gives them slight variations so be aware that each knife will vary some from those pictured.

    This knife is all I expected it to be and more. The fit and finish out of the box is outstanding with polished edges all over, The weight and balance is just right for a 210mm Gyuto, a bit heavier than my 240mm Kono HD2 but it is just right for the home cutting board. The OOTB edge was just a slight micro bevel that while sharp is just the beginning of what it is now. I took almost no time on my Shapton 1K Glass stone to set a nice low angle bevel and finished with a 5K Shapton Pro stone and a few strokes on my kangaroo strop. This is by far the easiest knife I've sharpened and within 10 minutes of (amateur sharpener) work this knife is scary sharp and goes through food with no effort. If your lucky enough to be in the market for a knife when one of these show up on the site, I would highly recommend you act fast.
