Posted By: CBI have yet to be let down by the Fujiyama smith and his preferred sharpener. This knife is absolutely fantastic and the pattern is one that I wish was more prolific throughout the line-up. The steel excellent, the knife is insanely nimble in the hand and the grind is a thing of beauty. This comes about as close as one can get to the performance and feel of laser in clad, handcrafted blade. That said, the geometry is pronounced enough, and so well conceived, that the knife is a bit more multidimensional than the aforementioned description. The flat isn't longer per se than the other Fujiyama gyutos, but there is less curvature/belly which creates a very versatile cutter. This marks my 8th Konosuke gyuto/kiritsuke and it is an absolutely stellar addition. These knives are not carbon copies across lines and do indeed have unique traits.
