Konosuke Fujiyama Aogami #2 240mm Funayuki/Gyuto
The Konosuke Fujiyama line of knives is a standard against which other high end knives are measured. These knives are hand produced in Sakai City, a city known for the long history and exceptional quality of its cutlery industry. The Fujiyama are particularly well regarded for their beautiful design, top rate fit and finish, and high performance grinds. This 240mm Funayuki Gyuto is a versatile chefís knife with a flatter profile for those who prefer to push/pull cut or chop rather than rock cut. The standard 240mm gyuto from this line of knives offers the more traditional gyuto profile for any users that prefer more curvature in the profile of a chefís knife. The knife is clad construction with an Aogami #2 core hardened to 61-62 HRC and carbon steel cladding. As the knife uses all carbon steel in its construction it is reactive and will patina with normal use. The knife has a high quality octagonal handle with an excellent installation. As with all handmade knife individual examples will vary dimensionally from one another.

    5  The perfect version of a nearly perfect knife, July 7, 2016

    I've owned one of these for a couple years now, although mine came with an ebony handle which affects the balance a bit. While this profile and style of knife is not for everyone (some prefer more robust grinds, others prefer more weight or length, etc), I think of this knife as a perfect version of the kind of knife it tries to be: a carbon knife with a dagger profile (or Sab-like profile) and a super-thin edge and grind but a weighter, balanced feel in the hand. While it came with a sticky polish, using the knife regularly and cleaning it a few times with Bar Keeper's Friend eased up the polishnow, the food release and separation is astonishingly good for a knife this laser-esque. This is my current "island" knife, even though it is fully reactive. Again, not for everyone, but if it is the type/design of knife you want, you can hardly do better.

    I have yet to be let down by the Fujiyama smith and his preferred sharpener. This knife is absolutely fantastic and the pattern is one that I wish was more prolific throughout the line-up. The steel excellent, the knife is insanely nimble in the hand and the grind is a thing of beauty. This comes about as close as one can get to the performance and feel of laser in clad, handcrafted blade. That said, the geometry is pronounced enough, and so well conceived, that the knife is a bit more multidimensional than the aforementioned description. The flat isn't longer per se than the other Fujiyama gyutos, but there is less curvature/belly which creates a very versatile cutter. This marks my 8th Konosuke gyuto/kiritsuke and it is an absolutely stellar addition. These knives are not carbon copies across lines and do indeed have unique traits.

    Well, think this makes Kono number 8? But if you are looking for a flatter profile then look no further. Same fit and finish as the usual blue 2 but flatter. Really good for chopping. It is a little heavier than the normal one but only by a very little. Only someone who has both would be able to tell. But a great knife for those who are looking for a flatter gyuto. And the usual great service from Mark.
