Konosuke are among the most popular and sought after knives on the CKTG site. Regardless of the particular line, they pretty much sell out as soon as we get them in stock. So when we receive a particularly rare blade from them it is no surprise that it is snapped up as soon as it hits the site.

Arguably the most difficult knife to make is a honyaki type of mono steel blade. Honyaki blades are made from a single steel bar which has been hand forged and water quenched in the same way as Katana swords have been made for hundreds of years.

Konosuke uses the very popular Hitachi Blue Paper #2 carbon steel for this application. It is highly regarded as one of the best alloys for kitchen knife applications and when employed in a honyaki knife those favored attributes are heightened. The beautifully polished finish of the blade just adds to the mystique and allure of this rare bird.

Konosukeís fit and finish are of the highest quality. Now add the elevated level of smithing required to make one of these limited edition blades and you have a knife of truly world class standards.     A truly fine expression of the knife maker's art. Beautifully balanced, takes and holds a superior edge and develops a lovely patina. Along with my other Kono Fujis, a go-to knife for virtually anything. And the handle work by Isaiah Schraeder needs to be seen to be believed.

    Amazing, absolutely amazing, nimble, workhorse, flys through all ingredients, carrots to onions, to shallot to garlic, gets everything done, goes through protiens like nothing. Love it, worth every penny. Holds a nice patina, so the blade stays safe. I love it.

    Any time You get an by an Isaiah Schroede made handle' You know the fit & feel will be top notch. Konsuke Honyaki's are hand made pieces of art that will last a lifetime in the average Kitchen. Lastly, You can not beat CKTG for selection, price or service.
