This Kikuichi Tatsutogi Deba knife measures approximately 180 mm on the blade and is used by sushi chefs like a western cleaver. They tend to cut fish heads and tails and other chopping tasks where a thick, large blade is required.
Iíve has this knife for about two years and I just love using it whenever I can. The f&f is great,it stays extremely sharp and this steel has to be the LEAST reactive I have ever come across. It is a beast! and will fillet like dream and I think this line of Kikuichi is very overlooked.
