Yanagiba bocho means willow blade and the yanagi (for short) is, quite simply, the ideal slicing knife. It is designed to be pulled gently through the food to create the slice in one backwards movement. This precise, single-bevel blade reduces loss of the natural juices and allows for the cleanest cuts imaginable. It is the standard tool used for slicing raw fish for sashimi and it is also often used for slicing sushi rolls. Many Western chefs have started to use this knife as a tool for slicing all kinds of raw and cooked boneless proteins.

The Kiyotsuna Josaku yanagiba is made from a stainless steel called AUS-8A. This is a fairly hard steel due to the use of vanadium in the alloy. The additional element gives the steel extra hardness and makes it very easy to sharpen to a keen edge. The blade is only sharpened on one side, which is typical of all yanagis. The other side has a very slight concave profile which aids in food release.

Kiyotsuna Josaku makes basic working knives using good materials while avoiding unnecessary bling. For the price, the Yanagiba featured here is a wonderful entry point into the exotic world of Japanese sushi knives.
