The deba is one of the three most quintessential Japanese kitchen knives (along with the yanagiba and the santoku). The deba originated during the Edo period in the city of Sakai. It was designed to behead and fillet fish. Its robust construction and blade thickness are mated to a more obtuse angle on the back of the heel. This allows the user to cut off the heads of fish without damage to the blade. The rest of the blade is then used to ride against the fish bones, separating the fillet.

Traditionally, debas are made of carbon steel, which needs regular maintenance and oiling to prevent rust. The Kiyotsuna Josaku deba, however, is made from a very resilient alloy called AUS-8A stainless steel. The steel has been hardened to 58-59 HRC. Aside from good corrosion resistance, this steel is also easy to sharpen. At this price, the Kiyotsuna Josaku deba is a stand-out bargain. We really love this plain and simple blade which has been well ground and finished. It is enhanced by the nicely engraved kanji script. Itís a great entry level knife for people who want to dip their toes in the single bevel waters.
