This is the big boy of the Kitaoka deba line. It has a blade length of just over 210mm which makes it the perfect choice for butchering and filleting large fish and other proteins. The blade is made with a core (Hagane) of Shirogami #1 steel. The Jigane, or outer layer, is made from 12 layers of softer carbon steel which are forge welded to the hagane to form a Damascus or Suminagashi finish. The carbon steel construction requires the user to carefully clean and dry the knife after every use.

As with all traditional Japanese knives, this deba is sharpened on one side only while the other side is given a slightly concave profile for easy food release. This means that it is a knife suitable for right-handed users only. Because of this single bevel, these knives can generally be honed to a sharper edge than can double bevel knives.

Like the other deba knives in the line, it comes with a very attractive and modern take on a traditional octagonal Japanese handle made from rosewood with a pakka wood ferrule. We really like these handmade knives and would recommend them to anyone looking for a traditional Japanese blade offering outstanding performance and great looks.
