This Shun Classic Santoku With Hollow Edge is a great all around replacement for a chef knife. Santoku knives are general purpose knives used by Japanese people like a slightly smaller chef knife. Shun knives are made with VG-10 stainless steel with beautiful Damascus steel.

Having recently used this knife a bit,I can easily recommend this knife. The steels held an edge at least as well as any other quality kitchen knives Iíve used,and it came quite sharp. The handle is also very comfortable,and the build quality is great. The hollowed out sections on the blade didnít seem to do much,though,so Iíd recommend the normal one instead.
Feels good in my hands. Very sharp,does a nice number on ripe tomatoes.

This knife does everything I had hoped for. It slices paper thin,cuts through meat and veggies with little pressure and is easier to wield than the longer version.
