Ive owned a set of these knives for over 2 years now. I cannot recommend these knives due to the brittleness of the edges. Ive had them chip cutting cheese and other hard foods. They are very sharp but redressing an edge is a lengthy process. I havent bothered trying to send them back to shun (4 or 5 of em have chipped edges now) simply because I believe a product in this price range should be flaw free.
I think Shun Classic knives are wonderful. I wonder how Frank has managed to ’chip’ the edge of the knives as we have had the same set for the last two years,we cook everyday,and they are fantastic. We have had two for the knives sharpened (we use those ones the most) but other than that they are perfect! If you follow the simple rules from the youtube video http://youtu.be/ssncbR-_9jQ you should be just fine.
