The Kajiwara 180mm deba, like its smaller sibling, is designed primarily for the filleting and butchery of fish. The blade is very thick, and quite heavy. The extra length of this model will come in handy for large salmon or tuna, swordfish, and other large fish; the spine of the knife will crack crustacean claws like a twig underfoot. The kurouchi finish on the blade is a result of carbonization that occurs during the heat treatment process. The Aogami #2 steel has been heat treated to 62 Rockwell for great edge taking and retention, but not so hard that it becomes chippy or brittle. This is a carbon steel blade, and even with the protection of the kurouchi finish, it does need to be wiped dry to prevent the formation of rust.
