The deba knife is a traditional Japanese fillet knife, built thick and heavy for cutting through fish bones with ease. Knives from the Tosa region in particular are often not single bevel ground as they are further north, instead they are given a 50/50 grind suitable for use by lefties and righties, and that is the case here as well. The Kajiwara 165mm deba is constructed of Aogami #2 or blue paper #2 steel, and it is extremely thick and hefty. This blade will laugh fish heads in the face, and break through backbones as if they didnít exist. The kurouchi finish has a lovely handmade rustic look, and it protects the 100% carbon steel blade from corrosion. Like all carbon knives, this deba should be wiped dry before storage. This knife comes in at 11+ ounces at only 165mm in length, which is serious heftóthis knife is ready for some serious work.
