Ko Bocho translates to English as “little knife,” and that’s just what this lovely little guy is. Shaped like a little santoku, this small and tall utility blade is shaped just perfectly for chopping and mincing small ingredients, but retains the ability to be used in hand. At 36.6 mm tall, there is actually very good knuckle clearance for board work, and its size makes it totally unobtrusive in your workspace. In other words, this little knife is a great complement to your gyuto.

Tsutomu Kajiwara forged these blades of Aogami #2 or blue paper #2 steel, and gave them a rustic and traditional kurouchi finish by leaving the black carbonized coating that appears during the heat treating process. This coating protects the blade from rust, and lends a simple utilitarian look to the knife, almost as if the blade stepped from a Japanese kitchen 150 years ago into yours. This knife is 100% carbon steel, and will patina with use, and if stored damp it will rust. The handle is rosewood with an ebony ferrule, and is a nice finishing touch, especially at this price point.
