Kaneshige Cutlery. Some of you may know that Kaneshige is the parent company of Konosuke. We thought we would fill out our selection of Japanese knives with these excellent quality left handed knives made with G-3 Stainless steel.
Ginsanko – Made up of Carbon: .95%, Chromium: 13.00 – 14.50%, Manganese: .60 – 1.00%, Phosphorus: .030%, Sulfur: .020%, Silicon: .35%
This steel is also known as Gin-3 or Silver-3 and has excellent stainless properties. The original design for this steel was to be used in scissors and knives. It is very similar to 19C27, AEB-L, VG-1, and MBS26. It is also very similar to the steel found in the very popular Suisin INOX Honyaki line of knives. Saya not included.
