Anryu Hammered Gyuto 210mm. Katsushige Anryu started apprenticing as a knife maker under his father, Katsutoshi Anryu, after graduating high school in 1959. He is a fourth generation knife maker and has been working as a blacksmith for well over 50 years. The knives we are selling under his name are great examples of his work.
The Hammered Blue #2 line have a unique hand-hammered finish with a stainless clad and Aogami #2 (blue paper #2) steel core on the edge. He heat treats these knives in the HRC 62+- range. This knife features a sky-blue lacquered ho-wood handle.
There’s a lot of conversations on the forum of CKTG about this gyuto made by Katsushige Anryu,and for excellent reason. It just represents the best compromises : light but not a laser,easy to maintain with a stainless cladding but still made of sturdy carbon steel,comfortable rounded choil,and a durable handle made of rosewood and ebony. The balance in the hand is exactly at the pinch grip. And I should add that this relatively affordable knife is way more beautiful in real than on the already good picture of the website.
