We are very pleased to be the sole US distributer of these fine knives from Kikuichi. They are made with a mono steel construction of a proprietary semi stainless steel. The alloy is is hardened to 61-62 Rockwell.

The fit and finish of these knives is of the highest order. Blade geometry is also well considered and executed. They boast a thin spine measuring just 2.3mm at the heel. There is a gentle taper along the entire blade which ends at the finely ground and nicely thinned tip. The 240mm blade edge has a conservative and easy to use profile with a nice flat area and gently curved belly. The 50/50 symmetrical grind is well executed and it is quite thin behind the edge.

The blade is coupled to a black pakka wood handle. There is a well made stainless bolster which joins the handle at the balance point. This simple yet attractive combination gives the knife a very refined look and feel.     This knife is great. I have a Takeda 240 and a few other top quality knives, and this is the knife I reach for. The edge retention is good, and it is easy to sharpen. Awesome knife.

    This knife belongs on the Mt Rushmore of knives or whatever there would be for a chef knife monument. The utter plainness of its design is what make its sexy. Its a beast. All that and everything else all these other people are saying.

    Great knife, was sharp out of the box, but made it RAZOR sharp w/ some shapton stones I also purchased from CKTG.

    Have to say that the shipping was surprisingly quick!

    Excellent knife. Thin and takes a very good edge. The wight is heavier than I had expected but still is light. Keeps its edge for a good while even when used on poly boards. As normal great dealing with Mark.

    After a month of researching a new workhorse knife, I was almost unanimously pointed in the direction of this knife. To say it lived up to the hype is an understatement.

    Right out of the box, this thing is sharp enough to shave with. It's been through about a week of high-volume prep, and has yet to lose that edge. My cuts have become so precise and effortless that I actually enjoy taking on more prep. The blade is thin and lightweight as hell, and the handle is very comfy; the balance point is perfect for me.

    I could go on for hours about how great this knife is. If you want a knife that's all business (it still has a subtle sexiness to it) and a top-notch performer, this is for you.

    This knife is fantastic. Great balance and arrived razor sharp. IT practically fell through the potatoes I cut with it last night.

    I heard good things about this knife but it definitely met any and all expectations I had for it. I would strongly recommend this to anyone who is looking for a reasonably priced gyuto.

    In my opinion, the match of high quality steel and advanced knife design makes this the best stainless western-handled gyuto/chef's knife money can buy.

    The sharpness is first-rate and the edge retention is also outstanding. The geometry is superb, yet not delicate either.

    The handle is a good size, has a wonderfully comfortable taper and the fit and finish is in the upper range for Japanese knives of any price point.

    The original Ichimonji (and CarboNext) handles are too short and slender for comfort so I hardly ever use mine any more.

    Well done, Mark and Kikuichi for making this happen!

    Very pleased with this knife so far. Thin, sharp, and durable with a comfortable handle. Took off one star because fit and finish of the handle isn't great (compared to a Wusthof) but still decent. FYI, the bolster is riveted but you have to look hard to tell.

    The TKC 240 has become my favorite stainless gyuto, bumping my previous favorite (240 Akifusa) one spot down the list. The fit & finish of my particular specimen is absolutely immaculate- no room for improvement. And the geometry is awe-inspiring: This baby is thin! Two thumbs up, a wicked knife!

    I have been using one of these for about 3 weeks. My wife and I are finding this to be one of the most used knives in our kitchen. Given the number of high performance knives in our kitchen this is saying a lot! Easy to maintain (keep it dry in storage), stays sharp, easy to sharpen...Great

    The TKC gyuto is on par with the best gyuto's anywhere, for any amount of money. If what you want is a pure performer (no glitz, no glamour) then this is the knife for you. It's made of an incredible stainless steel that sharpens easily and has outstanding edge retention. The knife is incredibly thin and the blade shape is among the best available for a chef's style knife.
