- verified customerI've been using a Tojiro DP 210 for some time now, and have sharpened it all the way up to the cladding in about 6? years of professional use. Its been a great knife at a good bargain price, but I finally decided to move up to a 240. Upgrading also afforded me the opportunity to move to a new higher grade steel, the tojiro VG-10 was tiresome to keep sharp. That said since a large amount of my daily knife work involves highly acidic foods I am not ready to go all out on a high carbon blade at this point. This knife, on paper, was everything I wanted for my new everyday prepper.
Every so often I get it right... my research and planning land me a quality product that lives up to the hype. This knife so far has been the best investment into my career I have made in some time. It was screaming sharp right out of the box, which is rarely the case for me and new knives. I've been using it every day for 10 days or so and I have YET to put it to a stone. The steel is very clean, and well polished, I have a little issue with the bolster being edgy, but I use a pinch grip mostly so it doesn't bother me enough to warrant touching it up.
The geometry of the blade is fantastic, nice flat spot behind the belly gives the knife a clean chop, and a pleasant stop when pushing. Its very thin behind the edge for a stain resistant steel, and passes effortlessly through most vegetables.... I have noticed it bind a little in stalks of celery and the occasional stubborn rutabaga, but mostly it freaking demolishes knife work.
I am rarely 100% satisfied and the TKC is no exception.. The bolster and handle could have used a touch more refinement, and its a little heavier than I would like with balance point very very close to the bolster, which has been taking some getting-used-to. Honestly I think if there were another 5mm of blade height, that wouldn't hurt my feelings either. I also have yet to really work on the edge (outside of some light honing) So, I still don't know how it will respond to sharpening. But so far...all in all this knife is well worth the money.
