The Tamashii line of knives from Hinoura are fashioned from White Paper #2 carbon steel which is hardened to 62-63 HRC. This very durable alloy is covered with a layer of a softer stainless steel. Unusually for a stainless cladding, it then receives a kurouchi finish to further enhance durability and food release. This is a very popular steel for high end Japanese cutlery. These knives take an extremely fine edge and the core steel will be reactive so it must be dried carefully between uses.
The 270mm sujihiki is a perfect mid size slicer for use by both home and professional cooks. It is long enough to cut most produce in one movement, but not too long to require an oversized work area. Hinoura-san has fashioned a blade with great visual and performance characteristics. The grind is thin and of a high standard. The rustic blade face is perfectly integrated into the bead blasted blade road. This then transforms into a really beautifully polished edge.
The lovely looking blade is attached to an octagonal Ho wood handle with a black buffalo horn ferrule.
