We have recently been able to acquire these very popular knives direct from the manufacturer since Hattori had a very difficult time supplying them. The only difference is that the manufacturer's name is engraved on the blade in Japanese characters. Their name is Maruyoshi. The knife knife measures 170mm on the blade. These excellent knives offer traditional technology combined with modern material for high cutting performance. The core steel is made of VG10 with 63 layered Nickel Damascus stainless steel blade. VG10 is the newly developed High Carbon (0.95 to1.05%) Molybdenum (0.90 to 1.20%) and Vanadium (0.10 to 0.30%) stainless steel plus 1.30 to 1.50% Cobalt added to increase strength. The edges have a Rockwell hardness of 60 to 61 HRC. The beautiful Damascus blade is hand engraved. The handles are made with black Pakkawood and three stainless steel rivets.
This Hattori santoku is great one for all knife. I also own a more expensive Wa handled Hattori gyuto yet this santoku sees more board time! It takes and holds a great edge,is well balanced, nice too look at and the fit and finish is well worth the Hattori name. Most people could survive on this one knife and a parer in their kitchen!

Thanks for the knife. Now all of my family have one. It took 4 years but they all have it now.
Well balanced, razor sharp and holds a fine edge a long time.Cuts with ease. This knifes a work of art. Dont think about it just get one,you wont regret it.
I love this knife. The balance is amazing, and it was super sharp right out of the box. It has seen a lot of board time this week, and will continue to do so for the foreseeable future.
Amazing fit and finish. Very sharp, lightweight and has fast become my "go-to" knife. Supplanting my Hiromoto AS and Kikuichi Tsuchime
