Santoku, most literally translated, means the knife of three virtues. This blade shape has become quite popular and for good reason. They sit nicely in the 'goldilocks' zone of knives. Not too long, not too short. Belly is neither too flat nor too curved. They are a jack of all trades sort of knife that can handle a variety of tasks; they're shorter like a nakiri, but still possessing a tip for more detailed work. This is a great blade as an entry level Japanese knife and the VG-10 steel is hardened to 60-61 Rockwell, lending them very sharp and durable edges.

    This Hattori santoku is great one for all knife. I also own a more expensive Wa handled Hattori gyuto yet this santoku sees more board time! It takes and holds a great edge,is well balanced,nice too look at and the fit and finish is well worth the Hattori name. Most people could survive on this one knife and a parer in their kitchen!
