We have recently been able to acquire these very popular knives direct from the manufacturer since Hattori had a very difficult time supplying them. The only difference is that the manufacturer's name is engraved on the blade in Japanese charecters. Their name is Maruyoshi. The Gyuto or western chef knife measures 210mm or 8.25 inches on the blade.
These excellent knives offer traditional technology combined with modern material for high cutting performance. The core steel is made of VG10 with 63 layered Nickel Damascus stainless steel blade. VG10 is the newly developed High Carbon (0.95 to1.05%) Molybdenum (0.90 to 1.20%) and Vanadium (0.10 to 0.30%) stainless steel plus 1.30 to 1.50% Cobalt added to increase strength. The edges have a Rockwell hardness of 60 to 61 HRC. The beautiful Damascus blade is hand engraved. The handles are made with black Pakkawood and three stainless steel rivets.
A great knife with great looks and great steel. If you want a Damascus that isn’t just for looks,but can keep up with any other knife’s performance,this one is it. I dinged it a single star (should have been a half a star) for the occasional fit and finish issues with the handle.

Great knife and great eye candy too. This knife has that great feel to it. Like shaking hands with an old friend when pick it up and use it. Superb fit and finish as with all Hattori knives. One of my first mid to high end knives. 5 years of restaurant duty and still going strong.
